Pasko 2011

A quiet Christmas at home was a good excuse for me to experiment (or, what most of you would prefer as cook).  I was meaning to host a good friend of mine and her family as I usually spend Christmas with them when I'm in town but she was in strict bed rest at home trying not to deliver two premature babies...  So I had already planned on having this pork roast (stuffed with spinach and prosciutto) when I realize it will be an even quieter Christmas.  I already had the recipe in mind (ingredients pretty easy: pork, prosciutto, spinach, parmesan-reggiano cheese, salt & pepper).  And I learned how to butterfly the pork!  And it was good!!

Christmas morning, we have our Christmas pusa, Keiva adorned with a silver gift ribbon!

Maligayang Pasko!

To Resist or Not To Resist

And the holiday temptations begin..... This one at the corner nook of our bullpen (it is that area where we do our charts when we see patients and our nurses hang out.... and yes, the area where the goodies our patients give for us are placed!).

I grabbed one because -- a) I wanted to take its picture  b) I was deluded that the brief second of holding it would satiate my craving  c) I was wishing my friend Lovie a happy birthday and would gladly eat the calories for her knowing she'll do the same for me d) I could burn this one with an extra 30-minute in the elliptical anyway....

In the end, I had one.

I was hungry.  What more rationalization do I need?
